Follow my step by step instructions for delicious Low Sodium Kale Quinoa Salad.

Step By Step Instructions

Mix all dressing ingredients, except olive oil, together in a medium bowl. Whisk in olive oil. Set aside.

Cook quinoa according to package directions.

Place chopped kale in a large bowl. Add orange segments, half the pomegranate seeds, red onion, quinoa, and half the goat cheese.

Add dressing and use tongs to toss until salad is well-mixed and evenly coated in dressing.

Sprinkle with remaining goat cheese and pomegranate arils.
